- 8 ounces 8 ounces shredded cabbage
- 2 ounces ¼ cup (2 ounces) grated beet
- 1 tablespoon 1 tablespoon grated ginger
- 0.5 cup ½ cup water
- 2 teaspoons 2 teaspoons Kosher salt
- 2 tablespoons 2 tablespoons plus 1 teaspoon apple cider vinegar
- 1 tablespoon 1 tablespoon sugar (optional)

Add the grated beet and ginger to a cheesecloth and wrap it into a pouch. Tie it securely.
