  • 1 large red apple, diced
  • 2 celery sticks, chopped
  • 1 onion, thinly sliced
  • 2 hard-boiled eggs, chopped
  • 4 cups baby spinach
  • Fresh chives and mint, chopped (for garnish)
  • 4 tbsp natural fromage frais
  • 2 tbsp vinaigrette
  • 3 tbsp roughly chopped bottled gherkins
  • Salt and pepper to taste
