  • 500 grams beef mince
  • 1 medium onion finely chopped
  • 1 medium carrot finely diced or julienned
  • 3 tablespoon red capsicum strips optional
  • 1/2 cup frozen or fresh peas
  • 2 tablespoons miso paste
  • 2 tablespoons gochujang paste adjust to taste
  • 2 tablespoons soy sauce
  • 1 tablespoon seasame oil
  • 1 tablespoon sugar optional, for balance
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated, optional
  • 2 tablespoon water
  • spring onions for garnish
  • seasame seeds for garnish

Instructions

    In a small bowl, mix miso paste, gochujang, soy sauce, sugar, and 2 tablespoons of water to create a smooth sauce. Set aside.

    Heat sesame oil in a large frying pan or wok over medium heat. Add the onion and cook until softened, about 3 minutes. Add the beef mince and cook, breaking it up with a spatula, until browned and cooked through.

    Stir in the garlic and ginger (if using) and cook for 1-2 minutes until fragrant.

    Add the carrot, peas and optional red capsicum strips. Stir-fry for 2-3 minutes until the vegetables begin to soften.

    Pour the miso-gochujang sauce over the beef and vegetables. Stir to coat evenly and cook for another 2-3 minutes until everything is well combined and heated through. Adjust seasoning to taste (add more soy sauce or gochujang if needed).

    Transfer the stir-fry to a serving dish. Optionally garnish with spring onions and sesame seeds.
