Ingredients
Quantities are shown as originally provided.
- 1/4 cup almond meal
- 1 15 oz can chickpeas
- 1/2 red onion finely diced
- 3 cloves garlic diced finely
- 1 tsp freshly grated ginger
- 1 potato boiled and mashed roughly with a fork
- 1/2 cup kale chopped up
- 1/2 tsp turmeric
- 1 tsp smoked paprika
- 1 tsp coriander
- 1 carrot grated
- 1 egg
- 3/4 tsp each salt and pepper

Add the chickpeas to a food processor or blender and pulse till they are broken up - almost smashed in appearance. Then scoop out the smashed chickpeas into a bowl.

Also to the bowl, add in the grated carrot, red onion, garlic, potato, ginger, kale, turmeric, paprika, coriander, almond meal, egg and salt and pepper and mix with a spoon or just get your hands in there.

Form into balls and then saute in an oven safe pan/skillet with olive oil until very slightly browned.

Then place pan in the oven and bake Veggie Meatless Balls for 25 minutes at 375 degrees.

Enjoy warm on a bed of sauteed tri-color bell peppers and onions along with sriracha, sambal oleak or simply ketchup.
