  • 2 bananas, thinly sliced
  • 3 cups oats
  • 1/2 cup pumpkin seeds
  • 2 tablespoons flax seeds, crushed
  • 1 tablespoon honey
  • 1/2 cup almonds
  • 1/3 cup raisins
  • salt, to taste.

    Prepare the banana chips:

    Preheat your oven to 250 °F (120 °C) on the convection setting. Spray a rimmed baking sheet with nonstick spray or a thin layer of oil. Spread out your banana slices evenly on the banking sheet and leave to dry in the oven for about 1 hour.

    Toast the grains:

    Heat a nonstick pan over medium heat. Add your oats and toast them for about 5 minutes, stirring constantly with a wooden spoon. Once they start smelling nutty and get a little golden, set them aside.

    Add the pumpkin and flax seeds into the pan and toast for 2-3 minutes. Set them aside.

    Add the honey into your pan and let it caramelize. Add the almonds and stir so that they are evenly coated. Be careful to not let the caramel burn. Place the caramelized almonds on a piece of parchment paper to let them cool down.

    Assemble the müsli:

    In a large bowl, combine the banana chips, oats, pumpkin seeds, flax seeds, almonds, and raisins. Mix everything well and stir in some salt to taste. Keep the müsli in an airtight container for long-term storage. Enjoy with some fresh milk or yogurt. It also tastes great combined with fresh berries.
