- 1/4 cup vegetable oil
- 1 tablespoon garlic crushed
- 1 tablespoon ginger crushed
- 1 1/2 litre water
- 2 teaspoons salt
- 100 gram rice noodles
- 2 cups shredded cooked meat chicken, beef, or pork
- 1/3 cup spring onion slivered
- 2 hot red chilies sliced
- 1/4 cup oyster sauce
- 3 tablespoons curry powder
- 2 tablespoons soy sauce
- 2 cups bean sprouts
- 1/2 cup carrot shredded
- 1/4 cup coriander chopped

Heat the water in a saucepan, add 1 teaspoon of salt, and bring to a boil. Once boiling, add the rice noodles. Turn off the heat and let the noodles stand.

In a wok, heat some oil and stir-fry the meat in small batches with a little garlic and ginger until browned. Set aside and drain and rinse the noodles.

In a bowl, mix the remaining ginger, garlic, oyster sauce, soy sauce, and curry powder to form a sauce.

Reheat the wok with a little more oil and toss some of the noodles with the carrot, meat, and a little of the sauce until the mixture is cooked through.

Stir in the bean sprouts and toss until the mixture is evenly combined. Garnish with sliced chilli and coriander.
