- 16 phyllo pastry strips
- 1 egg yolk
- 1 large onion
- 500g spinach
- 200g feta cheese
- Oil
- Salt and pepper

For the filling, Chop onion and heat oil in a frying pan. Fry until golden and crisp.

Add the washed and chopped spinach leaves to the crisp and golden chopped onions. Stir to combine. Add salt and pepper cover and cook until the spinach shrinks in size and darkens in color.

Remove from the heat and add the crumbled feta cheese and mix.

Phyllo dough is sold in large circular or rectangular sheets. If your phyllo sheets are circular you should use a pizza cutter or a knife to cut them into 8 even triangles. If your phyllo sheets are rectangular cut them into strips. For this recipe, we need 16 phyllo strips of phyllo triangles.

Beat egg yolk with a fork until well blended.

Place 1 tablespoon of the spinach and cheese filling at the bottom center of each phyllo pastry strip. Fold the left and right sides of the pastry strip towards the center and roll it up. Brush the end of the pastry with egg yolk or oil and roll over to stick.

Roll the other strips in the same way. Place the spinach rolls on a baking tray lined with parchment paper. Brush them with egg yolk and sprinkle with sesame seeds.

Bake in a preheated oven at 200°C until golden brown and crispy.
