- 3 overripe bananas, mashed (about 1 ½ cups)
- ½ cup organic granulated sugar
- ¼ cup organic brown sugar
- ½ cup canola oil (or melted coconut oil)
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp ground cinnamon
- ½ tsp salt
- ½ cup chopped walnuts (optional but highly recommended for a crunch!)

Preheat your oven to 350°F (175°C). Grease a standard 9x5-inch loaf pan and line it with parchment paper for easy removal

In a large mixing bowl, mash the bananas using a fork until smooth. Leave a few chunks if you like a little texture in your bread.

Add the granulated sugar, brown sugar, canola oil, and vanilla extract to the mashed bananas. Stir until well combined.

In another bowl, mix the flour, baking soda, cinnamon, and salt together.
