Ingredients

6
  • 1 head of cabbage
  • olive oil (to brush cabbage with)
  • 1/4 tsp garlic powder
  • salt and pepper
  • parsley and chili flakes to garnish
  • 1 tbsp olive oil
  • 1 yellow onion (peeled and chopped)
  • 2 clove garlic (peeled and chopped)
  • 1/2 can 100% pure pumpkin
  • 1/2 cup coconut milk
  • 1/4 tsp turmeric
  • 1/4 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp smoked paprika
  • salt and pepper to taste

Instructions

  1. 1

First off, peel of any damaged leaves around the cabbage. Then, keeping the core intact, cut the cabbage into 1/4 inch thick slices/steaks.

  2. 2

Preheat the oven to 400 degrees and while it is heating up, brush both sides of the cabbage steaks with olive oil.

  3. 3

Place cabbage steaks onto a parchment or silpat lined baking tray.

  4. 4

Sprinkle with salt and your favorite spices and bake for 35-40 minutes or until the cabbage slices are golden.

  5. 5

While the cabbage is roasting you can make the spicy pumpkin sauce by sauteing the onion and garlic in oil over medium heat for about 10 minutes.

  6. 6

Then add in the pure pumpkin puree and coconut milk and stir well.

  7. 7

Immediately after, add in the turmeric, cumin, coriander, and smoked paprika and stir well.

  8. 8

Let simmer about 5 minutes and then either transfer everything to a blender or transfer to a bowl in which you can use an immersion blender to blend the ingredients into a creamy sauce. When well blended add in salt and pepper to taste - a couple of pinches worked for us.

  9. 9

Serve Spicy Pumpkin Sauce on Roasted Cabbage Slices, garnish with chopped parsley and chili flakes and enjoy as a side dish with your favorite main dishes.
