- 1/2 cup pecans
- 1/2 cup carrots (roughly 2 carrots)
- 1/2 cup dates
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tap cardamom
- 1/8 tsp cloves
- 1/2 tsp fresh ginger (1/2 inch chunk of fresh ginger)
- 1 tsp vanilla extract
- 2 tbsp maple
- 2 tbsp coconut flour
- 1/4 cup raisins

First off, soak your dates in a bowl of warm water for 30 minutes to an hour.

Then, clean the 2 carrots and grate them to yield a 1/2 cup.

Peel the chunk of fresh ginger and grate it using a Microplane grater.

Then add the soaked dates, grated carrots, pecans, cinnamon, nutmeg, cardamom, cloves, grated fresh ginger, vanilla extract, maple syrup, coconut flour, and raisins to a blender and pulse until all the ingredients are well blended.
