Ingredients

  • For the herb extract:
  • 1.5 cup water
  • 2 bags herbal tea of your choice or a bunch of fresh/ dried herbs from your garden
  • For the candy mass:
  • 140 g granulated sugar
  • 60 g glucose powder
  • a few drops of peppermint essential oil, mint essential oil, and menthol, to taste (optional)
  • a few drops of coloring caramel (optional, for color)

    Prepare the herb extract:

    Bring the water to just below a boil and add in a bag of herbal tea or fresh/ dried herbs of your choice. Turn off the heat and let the tea steep for at least 10 minutes.

    Prepare the candy:

    Combine the herb extract, sugar, and glucose powder in a small pot with high edges. Bring the syrup to a boil and keep boiling it until the temperature on your candy thermometer reaches 149 °C (300 °F). Take the pot immediately off the heat. Once the syrup stops bubbling, you can stir in the essential oils and coloring caramel (optional). Pour the hot syrup into candy molds or take a spoon and place small drops of the syrup on a piece of parchment paper. Once the candy has set, you can wrap it in candy wrap to store it so it won't get stuck. Or you can dust it with powdered sugar and store it in a mason jar.
