- 1 lb (500g) salmon fillet (cut into two equal-sized pieces)
- 1 pinch salt
- 1 dashes ground black pepper
- 1 teaspoon oil (for pan-searing)
- orange slices (for garnishing)
- sesame seeds (for garnishing)
- 1/3 cup Japanese cooking sake (or Chinese rice wine)
- 2 tablespoons soy sauce
- 3 tablespoons orange juice
- 1 tablespoon sugar
- 1 teaspoon cornstarch

Season the salmon with salt and black pepper.

Mix all the ingredients for the Orange Teriyaki Sauce in a saucepan. Heat over low heat until the sauce thickens and slightly reduces. Set aside.

Heat a skillet with cooking oil over medium to high heat. Pan-sear the salmon until cooked through, about 4–5 minutes per side, depending on the thickness of the fillets.

To serve, drizzle the Orange Teriyaki Sauce over the salmon. Top with sesame seeds and serve with orange slices and steamed rice.
