Brazilian Funnel Cake Bites

Ingredients
Quantities are shown as originally provided.
- 1 cup of all purpose flour
- 1 Tbsp baking powder
- pinch of salt
- 1/4 cup of sugar
- 1 whole large egg
- 1 tsp of vanilla extract
- 2/3 cup of whole milk
- oil for frying
- 1/4 cup of sugar
- 1 Tbsp of cinnamon

For the sugar coating:

Mix together the sugar and cinnamon in a large plate and reserve.

For the dough:

Prepare the oil for frying. Heat it up low and slow so it does not become too hot too fast.

Add the flour, the baking powder, the baking soda, the sugar and the salt to a large bowl and whisk to combine. Set aside.

In a medium bowl, whisk together the egg, the vanilla and milk until combined.

Add the wet ingredients to the dry and whisk to combine.

Using a small ice cream scoop (or two spoons), form little balls (like a 2 bite donut hole) and drop directly into the hot (350F) oil.

Fry until golden brown and balls are cooked through.

Place the fried funnel cake bites on a plate lined with paper towels for draining excess oil.

Then drop them while still hot in the cinnamon-sugar mixture for coating.
