Indian Spiced Zucchini and Tomatoes
Loaded in flavor as some turmeric for it's anti-inflammatory properties, this Indian spiced zucchini and tomatoes dish will not disappoint your taste buds.

Ingredients
Quantities are shown as originally provided.
- 1 medium onion (diced)
- 2 tbs ginger (minced or grated)
- 1/4 tsp red chili flakes
- 2 cloves garlic (grated)
- 1 tbs cumin
- 1/2 tbs turmeric
- 1 tsp coriander
- 1/2 tsp sea salt
- 1 large zucchini (or 2 medium zucchini - cut large dice)
- 2 tomatoes (diced)
- 1/4 c fresh cilantro (for garnish)
- 1/4 c plain yogurt (for garnish optional)
Instructions

Spray medium sauce pan with non-stick cooking spray and sautee onions, ginger and chili flakes for 3-4 minutes or until onions become tender.

Add garlic, cumin, tumeric, coriander and salt - cook additional 60 seconds.

Stir in zucchini and sautee 2 minutes.

Add tomatoes, stir and bring to simmer.

Cover and let cook for 15-20 minutes or until squash is tender.

Garnish with fresh cilantro and plain yogurt if you wish.
