  • 3 skinless and deboned chicken breast meat
  • 1 Tbsp light soy sauce
  • 1 Tbsp sesame oil
  • 2 Tbsp shaoxing wine
  • 1 tsp white pepper
  • 2 tsp chopped garlic
  • 1 tsp chopped ginger
  • 3 Tbsp potato starch (flour)
  • 3 Tbsp self raising flour
  • 100 - 150 ml water
  • 2 Tbsp cooking oil
  • 2 tsp chopped garlic
  • 1 tsp chopped ginger
  • 150 ml water
  • 2 Tbsp light soy sauce
  • 1 tsp honey
  • 1 Tbsp white vinegar
  • 1 Tbsp sugar - to taste
  • 1 Tbsp cornstarch
  • Toasted sesame seeds
  • Cut spring onions

Instructions

    Wash, pat dry and cut the chicken breast meat into bite sizes and put them in a tray.

    Add light soy sauce, sesame oil, shaoxing wine, white pepper, chopped garlic and ginger.

    Mix well and add self raising, potato flour and water.

  4. 4

    Mix everything well until chicken pieces are fully coated with the batter. Set aside in the fridge for at least an hour.

    Heat up a pan with hot oil and carefully put in the chicken pieces one at time.

    Fry for about 3 - 4 mins until crispy and brown.

    After all the chicken pieces have been fried and removed, let the oil in the pan heat up again before double frying the chicken for another 2 mins.

    Remove chicken and drain in a wire basket.
