  • 5 tbsp natural cane sugar
  • 600 ml water
  • 1 pandan leaf
  • 200 g fresh longan fruit

    Prep the longans. Peel and pit the fresh longan fruit. Set them aside in a bowl.

    Make the syrup. In a small pot, bring water to a gentle simmer. Add brown sugar and a pandan leaf. Simmer for about 5 minutes, until fragrant and lightly thickened.

    Combine and cool. Turn off the heat and add the longans to the syrup. Let it cool to room temperature, then chill in the fridge. Serve over ice for a refreshing longan juice!
