Ingredients

Quantities are shown as originally provided.

  • 15 g butterfly pea flowers (use 2 tbsp (5g) if using dried flowers)
  • 500 ml water
  • lime or lemon juice (a squeeze, to taste)
  • 1 tbsp honey (add more to taste)

Instructions

  1. 1

Heat the water in a small pot or teapot until it gently boils. Turn off the heat and add the butterfly pea flowers directly into the hot water.

  2. 2

Let the flowers steep for about 5 minutes. You’ll see the water gradually turn a rich blue as the color releases.

  3. 3

Add honey to sweeten, and squeeze in some lime or lemon juice if you like. This adds a citrusy note and turns the tea from blue to purple. You can mix it right into the pot or add it when serving. Enjoy!
