Ingredients

Quantities are shown as originally provided.

  • 2 to 3 cups (320 to 480 grams) sauerkraut
  • ¼ cup (50 grams) granulated sugar
  • ¼ cup (60 milliliters) olive oil
  • 1 red pepper, diced
  • 1 large carrot, coarsely grated
  • 2 stalks celery, diced
  • ½ onion, diced
  • salt and freshly ground black pepper

Instructions

    Drain sauerkraut in a sieve over a bowl. Measure ½ cup of the liquid and reserve it.

    Place the drained sauerkraut into a large bowl and mix in the sugar.

    Let the mixture sit for about 15 minutes.

    Add the reserved ½ cup of sauerkraut liquid and olive oil to the bowl.

    Add the diced red pepper, grated carrot, diced celery, and diced onion.

    Season with salt, freshly ground black pepper, and more sugar if needed.

    Let the salad stand in the fridge for several hours, if possible, before serving.
