Ingredients
- 1 egg
- 60 ml light soy sauce
- 30 ml mirin
- 225 g rump steak (or any beef cut of your choice)
- 20 g butter
- black pepper

- 1 tsp chilli oil (optional)

Cure the eggs by immersing the egg yolks in soy sauce and mirin and refrigerate overnight.

Bring steak to room temperature then season with salt and pepper.

Cook your rice.

While waiting for the rice to cook, heat up some cooking oil on a pan, and sear the steak for 1-2 minutes on each side (adjust cooking time according to the thickness of steak).

Add butter to the pan and baste over the steak for a minute. Remove steak from pan and let it rest for a few minutes.

Once your rice is cooked and still hot, loosen the rice with a fork and stir in butter, soy sauce, spring onions, chilli oil and black pepper, and combine well.

Serve by putting the rice into a bowl, sliced steak, and top it off with the cured egg yolk and black pepper. Enjoy!
