- 1 chicken breast (seasoned with taco seasoning)
- 2 cups lettuce (cut into small pieces)
- ½ cup black beans (drained and rinsed)
- ½ cup kidney beans (drained and rinsed)
- ½ cup corn (drained and rinsed )
- 1 avocado (sliced or cubed)
- 1 cup cherry tomatoes (halved)
- 1 cup cucumber (sliced into half moons)
- ⅓ cup white cheese (crumbled (like queso fresco))
- 1 tablespoon chipotle peppers in adobo
- ½ cup plain yogurt
- 2 tablespoons white vinegar
- ½ teaspoon salt
- ¼ cup water
- 1 tablespoon dried oregano
- 1 teaspoon dried basil
- 2 tablespoons olive oil
- 2 tablespoons honey

Cook your chicken breast on a skillet.
