Cold Sesame Noodles (only 10 minutes!)
Cold sesame noodles, or ma jiang mian (麻酱面), is a popular Chinese cold noodle dish that's super creamy, savory, garlicky, and just enough sweet and tang to keep your appetite going! It's also topped with julienned cucumbers to keep each bite refreshing and some chili oil to add a fragrant, milld kick. Pair these noodles with some Taiwanese fried chicken or chicken karaage and some smashed cucumber salad to complete the meal!

Ingredients
Quantities are shown as originally provided.
- 4 ounces fresh cut noodles (more or less to your preference)
- 2 tablespoons Chinese sesame paste
- 1 tablespoon Chinese black vinegar
- 1 teaspoon soy sauce (light sodium)
- 1 teaspoon toasted sesame oil
- 1 teaspoon granulated sugar
- ¼ teaspoon salt
- ⅛ teaspoon ground Sichuan peppercorn (or to your preference)
- 1 tablespoon water
- 1 clove garlic (minced)
- Chili oil
- English cucumber (julienned/shredded)
- Cilantro (chopped)
- Green onion (thinly sliced)
- Crushed peanut
Instructions

Mix together all the ingredients for the sesame sauce until smooth and well combined. Set aside until needed.

Bring a pot of water to a boil and cook the noodles according to package instruction, or until just cooked. Drain immediately and rinse with cold water until the noodles are completely cooled.

Drain the noodles well and transfer to a plate or coupe. Dress the noodles with the prepared sauce, garlic, chili oil, julienned cucumber, and toppings.
