Lapsi

Lapsi, a delicious and nutrient rich Indian sweet made with cracked wheat or bulgar, ghee, nuts and raisins. Traditionally served as a dessert or side but this makes a perfect whole grain breakfast that can be meal prepped ahead of time. Instant Pot Video Recipe + Stove Top option included. Can be made vegan too.

Ingredients

Quantities are shown as originally provided.

  • 1 cup bulgar / cracked wheat (medium)
  • 2 tbsp ghee / oil
  • 1 cinnamon stick or 1 tsp cinnamon powder (optional)
  • 4 cloves (optional)
  • 4 cardamom (optional)
  • 1/2 cup jaggery or palm sugar or just sugar
  • 2 cups water
  • 1/4 cup raisins
  • 1/4 cup almonds, sliced or chopped

Instructions

    Hit Saute and heat ghee in the inner pot

    Add whole spices and toast for 30 seconds until fragrant

  3. 3

    Add cracked wheat or bulgur and toast for 1 minute until nutty aroma hits

    Add jaggery, raisins and water, give it a quick stir

  5. 5

    Close the lid, set to Pressure Cook for 10 minutes

    Allow pressure to naturally release, takes about 5 minutes

    Open, garnish with sliced almonds and raisins

    Serve warm or cool completely and refrigerate for meal prep

    Heat ghee in a heavy bottomed pot or pan

  10. 10

    Add cracked wheat, coat & toast for 1 minute until nutty aroma hits

    Add jaggery, raisins and water, stir well

    Cover and cook on low heat for 10 minutes

    Keep going until the water evaporates and ghee starts oozing out, that’s your cue it’s done.

    Serve warm or store for later.
