Chocolate Tiffin

This NO BAKE refrigerator cake is super easy to make and can be personalized. Use your favorite chocolate, fruits and nuts, mix and then chill! Perfect treat for the holidays!

Ingredients

Quantities are shown as originally provided.

  • ½ cup Butter, (use salted for that extra layer of flavor)
  • 2 tbsp Maple or Golden/Sugar Cane Syrup ((sugar syrup is more traditional for this so use it if possible))
  • 4 oz Chocolate, (dark (use milk chocolate if you prefer it sweeter))
  • 10 pieces Graham Crackers (or Digestive biscuits), (crushed into pieces)
  • 1/2 cup Pecans or other nuts, (roasted)
  • 1/2 cup Raisins or dried Cranberries,
  • 1/2 cup Dried Apricots, (chopped)
  • 4 oz Milk Chocolate ((for topping))

Instructions

    Grease and line an 8-inch square baking dish with parchment paper or cling film.

    In a small pan and over low heat, melt the butter, sugar syrup and dark chocolate. Cook, stirring, until everything is blended.

    Into the melted chocolate mixture, stir in the crushed biscuits, dried fruits and nuts.

    Spoon the mixture into the prepared dish. Melt the remaining milk chocolate over low heat in the stovetop or in the microwave. Pour all over spreading the chocolate evenly. Chill for at least 3-4 hours or until set. Let the tiffin reach room temperature before cutting into squares. Enjoy!
