Basic British Scones

Ingredients

- 3 cups all-purpose flour
- ½ cup white sugar
- 1 tbsp baking powder
- ½ tsp salt
- ¼ cup unsalted butter
- 1 egg
- 1 cup milk
- 2 tbsp heavy cream
- 2 tbsp unsalted butter
- ½ cup fruit jam

Preheat the oven to 400 degrees F and line a large baking sheet with parchment paper.

In a bowl, sift and mix the dry ingredients. Add the softened butter and rub with your fingers until the mixture resembles fine crumbs.

Stir in the egg and milk into the mixture, then whisk until a moist, sticky dough forms.

Turn the dough out onto a clean countertop, dusted with flour, and form it into a ball.

Press the dough to flatten it until it is a 2-inch thick circle. Use a knife to cut the circle into 8 pieces.

Place the 8 pieces of scones on the baking sheet and brush the tops with 2 tablespoons of heavy cream.
