Ingredients

- 4 cups cold cooked rice
- 2 eggs
- 1 teaspoon salt
- 1/2 teaspoons pepper
- 4 tablespoons canola or peanut oil
- 1/2 cup spring onion thinly sliced
- 1/2 cup onion diced
- 1/2 teaspoon soy sauce
- 1/2 teaspoon oyster sauce
- 1/2 cup chicken or ham diced
- 1 cup bean sprouts
- 1 clove garlic
- 1 cup peas

Break up the cold rice until it is loose.

Beat the eggs in a bowl and add salt and pepper.

Heat some oil in a hot wok, add the egg mixture and half the spring onions, scramble and cook until dry, then remove from the wok.

Add a little more oil to the wok and cook the onions and garlic for about 30 seconds.

Add the remaining spring onions and the meat in small batches. Remove and set aside.

Add the other vegetables, except for the bean sprouts, in small batches, cooking until they are cooked but still firm.

Once all the ingredients are cooked, cook a cup of rice at a time in the wok with some of the cooked ingredients and bean sprouts.

Once everything is hot, return all ingredients to the wok, add the soy sauce, and stir well before serving.
