Bok Choy and Crispy Potatoes
One of my favorite side dish- bok choy with crispy potatoes. You can taste a strong combined flavor.

Ingredients
Quantities are shown as originally provided.
- 2–3 heads bok choy
- 2 medium potatoes
- 3-4 tbsp. cooking oil (3 for pan| 4 for wok)
- 2 scallions (, minced )
- 4 cloves garlic (, minced )
- ½ tsp. salt (or to taste)
- ¼ tsp. black pepper (or to taste)
- 1 tbsp. light soy sauce
- ½ tsp. Pepper flakes (adjust for spice) (,optional )

Start with a pot of water, bring it to a boil, then blanch the bok choy for 20 seconds. Transfer them out, cool down. Cut into small pieces and then sqeeze the water out.

Peel and cut the potatoes into 3cm cubes and then cook them in boiling water for 7 minutes until soft.

Add a little bit more oil and then place the potato cubes in. Fry until all of the potato cubes are crispy and golden brown.

Add garlic and scallion. Fry until aromatic.

Add the Bok Choy in. Season it with salt, pepper and light soy sauce. Mix well. Optionally, you can sprinkle some chili flakes for a spicy and hot version.
