  • 500 gram chicken breast thinly sliced
  • 2 stalks lemongrass
  • 2 cloves garlic minced
  • 1-2 red chilies adjust to taste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon fish sauce (nuoc mam)
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar or honey optional, for balance
  • 1 tablespoon vegetable oil for frying
  • fresh coriander and spring onions optional, chopped, for garnish

Instructions

    In a bowl, combine the sliced chicken with lemongrass, garlic, half of the chilli, fish sauce, soy sauce, lime juice, and sugar or honey. Mix well and let it marinate for at least 15 minutes (up to 1 hour for a more intense flavour).

    Heat the oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook, stirring frequently, until the chicken is golden and cooked through, about 5–7 minutes.

    Transfer the chicken to a serving plate and sprinkle with chopped coriander, spring onions, and extra chilli slices if desired.

    Serve the lemongrass chicken over steamed jasmine rice, with fresh cucumber slices or a simple salad on the side.
