Ingredients

- 2 tablespoons cooking oil
- 4 cloves garlic (minced)
- 2 Chinese lap cheong sausage (cut into small pieces)
- 2 large eggs (lightly beaten)
- 1 cup frozen mixed vegetable (thawed)
- 4 cups overnight steamed rice
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon oyster sauce
- 3 dashes ground white pepper (or black pepper)
- salt (to taste)

Heat a wok or skillet over high heat. Add the cooking oil and sauté the garlic until aromatic. Then add the Chinese lap cheong sausage, stir, and cook for about 1 minute.

Add the beaten eggs and let them cook, breaking them into pieces with a spatula. Add the mixed vegetables and stir well. Then add the rice and mix thoroughly to combine all the ingredients.

Add the soy sauce, fish sauce (or oyster sauce), ground pepper, and salt, and continue to stir-fry for a minute or two. Once the rice becomes toasty, dish it out and serve immediately.
