Ingredients

  • 12 oz white or gold potatoes ((See Note 1))
  • 1 oz cheddar cheese (shredded)
  • 2 tbsp cornstarch
  • 2 tbsp cilantro (chopped)
  • 1/2 tsp garam masala
  • 1/2 tsp kosher salt
  • 1/8 tsp chili powder
  • 2 cup vegetable oil for frying
  • Ketchup, Mango Chutney Recipe, Tomato Pachadi or Cilantro Mint Chutney.

    Peel the potatoes and cut into small, uniform pieces. Add some salt to a medium saucepan of boiling water. Add the potatoes and cook covered for 10-15 minutes or until fork tender. Drain and transfer to a bowl.

    Mash the potatoes until smooth. Add the cheese, cornstarch, cilantro, garam masala, salt and chili powder. Mix together using a spatula until smooth. Taste for seasoning and adjust if needed.

    Using a tablespoon, scoop some of the potato mixture and roll into uniform small balls. This typically makes about 20 aloo tikki.

    In medium saucepan heat the oil to 350°F. Fry the aloo tikki in batches until golden brown and crispy, about 4-5 minutes. Drain on paper towels. Serve hot with condiment/dipping sauce.
