Delicious, Addictive and Crunchy Sabudana Vada made with less oil and guilt free in an Air Fryer. Ideal for fasting or as tea time snack.

Ingredients

Quantities are shown as originally provided.

  • 1 cup Sabudana or Sago Pearls (1 cup is 250 ml)
  • 1 1/2 cups Boiled and mashed Potatoes
  • 4-5 nos Green Chillies finely chopped
  • 1 tbsp Jeera or Cumin Seeds
  • 3 tbsp Groundnuts (coarsely ground)
  • Salt to taste (Use Sendha Namak for Fasting {Rock Salt})
  • Finely chopped coriander leaves
  • Oil as required to Air Fry the Vadas (See Notes )

Instructions

    Wash and Soak the Sabudana (up to 1/2 inch water) overnight. In the morning, the sago pearls would fluff up and be soft.

    Pressure cook potatoes, peel the skin and mash them well.

    Coarsely grind the groundnuts and keep aside.

    In a bowl, add the sabudana, boiled and mashed potatoes, finely chopped green chillies, cumin seeds, groundnuts and coriander leaves along with salt to taste.

    Mix everything well, mash slightly with hands. Shape them into round discs or Tikkis.

    Refrigerate for 15 minutes.

    In the meanwhile, Preheat the Air Fryer for 10 minutes at 200 degrees C

    Brush the Air Fryer mesh with Oil. Place 9 Vadas and brush some oil over the vadas too.

    Air Fry the Sabudana Vada for 10 minutes at 200 Degrees C. Remove, flip the vadas, apply some oil and repeat the process for 10 to 15 minutes at 200 Degrees C until crisp.

    Repeat the process for all the remaining vadas.

    Serve piping hot with chutney, curd or ketchup.
