  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 1/3 cup vegetable oil
  • 1/4 cup unsalted butter, melted and cooled
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup milk
  • 1 1/4 cups fresh blueberries (or frozen, see tips)

    Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

    In a mixing bowl, combine the flour with the baking powder and the salt. Reserve.

    In another bowl, you should put together sugar, vegetable oil, melted butter, egg, vanilla extract, and milk. Complete the mix until smooth.

    Little by little, add the dry ingredients to the wet ingredients and mix gently until combined. You can overmix and end up with a dense loaf, so just stop when you don't see streaks of flour anymore.

    Toss blueberries with a teaspoon of flour (helps prevent them from sinking). Fold into the batter.

    Spread the batter evenly in a prepared loaf pan. Bake it for about 50-55 minutes or until center comes out clean when inserted with a toothpick.
