Roasted Tofu with Hot Garlic Sauce

Ingredients
Quantities are shown as originally provided.
- 2 boxes silken tofu
- 300 g enoki mushrooms (, remove the ends)
- green onion and coriander for decorating
- 5 cloves garlic (, chopped)
- 1 tbsp. chopped ginger
- 1 fresh thai pepper (, cut into circles or you can choose a less hot type)
- 1 tbsp. chopped scallion white
- 1/2 tbsp. pepper flakes (, use Korean version)
- 2 tbsp. hot boiling water
- 1/2 tsp. salt
- 1/2 tsp. sugar
- 1 tbsp. light soy sauce
- 1 tbsp. oyster sauce
- 1 tbsp. Laoganma black bean sauce (, or homemade version)
- 1/2 tbsp. black vinegar

Cut the end of enoki mushroom and separate them. Take out a baking pan and cover with tinfoil. Place enoki mushroom at the bottom.

Scoop silken tofu and place over the mushrooms. Try o avoid overlaying.

Take a bowl, add chopped garlic, ginger, fresh Thai pepper and scallion with chili peppers. Pour in around 2 tablespoons of boiling hot oil on top. Add light soy sauce, vinegar, sugar, oyster sauce, water and chili oil (if preferring). Give everything a big mix and then spread on the tofu blocks.

Pre-heat oven to 180 degree C (365 degree F). And roast for 15 minutes. Decorate with fresh scallion and coriander.
