Century Egg and Tofu 皮蛋豆腐

Ingredients
Quantities are shown as originally provided.
- 3 Thousand year eggs
- 1 block silken tofu
- 1 bunch cilantro
- 2 1/2 tbsp soy sauce
- 1 tbsp sesame oil
Instructions

Boiling water over tofu to cover, let sit for 10 mins.

Slice tofu into 1 inch squares. Let sit to allow water to exude.

Scrap off clay that covers the century eggs and rinse the egg clean. Crack and remove shell. Slice each egg into 8 wedges.

Wash and dry cilantro and loosely chop.

Drain tofu.

Arrange tofu and century egg on plate, sprinkle cilantro over, pour soy sauce and sesame oil around tofu.
