Simple Gyudon (Family Size)

Ingredients
Quantities are shown as originally provided.
- 1 small onion
- 1 lb thinly sliced beef (454g)
- 2 tbsp sugar
- 2 tbsp sake
- 1/4 cup mirin (60ml)
- 1/4 cup soy sauce (60ml)
- 1/4 tsp grated ginger
- 1 1/2 cups water (354ml)
- 1/2 tsp dashi powder (optional)
- red pickled ginger (beni shoga) and chopped green onions for garnish, optional
- cooked rice for four people for serving

Prepare your ingredients: thinly slice your onion and set aside.

In a small mixing bowl or liquid measuring cup, add sugar, sake, mirin, soy sauce, and grated ginger.

Pour your soy sauce mixture into a large skillet. I like to use a 12 inch aluminum pan with deep sides. Set the pan over high heat and allow to simmer for a few minutes to cook off the alcohol.

Add water and dashi powder (if using). Bring the liquid back up to a simmer.

Add the onions and cook until slightly translucent.

Add the meat, spreading out the slices of beef evenly over the onions. Cover the pan with a lid and simmer for 3-4 minutes or until beef is cooked through.

Scoop the cooked beef with its juices over bowls of rice. Garnish with beni shoga and/or green onions, if using. Leftover beef can be kept in an airtight container in the refrigerator for a few days.
