  • 225 g Plain Flour
  • 25 g Cocoa Powder
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 100 g Caster sugar
  • 2 Eggs
  • 125 ml Milk
  • 1 tsp Vanilla Extract
  • 50 g Unsalted Butter (melted and cooled)
  • Vegetable Oil (For frying)
  • 100 g Dark Chocolate (Chopped)
  • 50 ml Double Cream
  • Sprinkles (To decorate)

Instructions

  1. 1

Combine the flour, cocoa powder, baking powder, baking soda, salt, and caster sugar in a mixing bowl. Whisk the dry ingredients together.

  2. 2

In another bowl, lightly beat the eggs, then add milk, vanilla extract, and melted butter to the mixture.

  3. 3

Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing.

  4. 4

Cover the bowl with clingfilm and let the mixture rest for 10 minutes.

  5. 5

Heat oil in a deep pan over medium heat until it reaches 170°C.

  6. 6

Using a small ice cream scoop or two tablespoons, drop spoonfuls of the mixture into the hot oil, frying 2-3 doughnuts at a time. Cook for 2-3 minutes on each side or until golden brown.

  7. 7

Remove the doughnuts from the oil using a slotted spoon and let them drain on a wire rack lined with paper towels.

  8. 8

Melt dark chocolate and double cream together in a heatproof bowl using either a microwave or a pan of simmering water. Stir until the mixture is smooth.

  9. 9

Dip each doughnut into the chocolate glaze and add sprinkles for decoration.

  10. 10

Leave the doughnuts to set for 10 minutes before serving.
