- 4 slices of sourdough bread, toasted
- 500g leftover roasted turkey, thick sliced
- 2 tbsp cranberry sauce
- 2 tbsp mayo (optional)
- 2 tbsp mashed potato (see my Instant Pot Mashed Potato recipe)
- 1/2 C leftover stuffing
- 2 tbsp gravy, warmed
- 1/4 C sauteed kale

Toast 4 slices of sourdough bread until golden and crisp. This prevents sogginess from the gravy and wet ingredients.

While bread toasts, reheat leftover turkey slices in a non-stick pan over medium-high heat for 2-3 minutes. Warm them through without drying them out. Add a splash of gravy to keep moisture.

Spread one side of two toast pieces with cranberry sauce, mashed potatoes, and mayo. The mashed potato layer adds creaminess and helps other ingredients stick.

Top each prepared slice with warm turkey slices, stuffing, a drizzle of warm gravy, and sautéed kale.

Spread remaining toast slices with more cranberry sauce. Top the sandwiches, cut in half diagonally, and serve immediately while everything's still warm.
