Ingredients

- 4 eggs
- 2 tablespoons olive oil
- 1/2 yellow onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper
- 1 can (14 oz) crushed tomatoes
- 2 tablespoons chopped fresh cilantro
- Salt and pepper, as desired
- Water, as needed

Heat olive oil in a cast iron pan on medium heat.

Add garlic, red bell peppers, onions and cook for 5 minutes or until the onion becomes translucent.

Pour the can of tomatoes and juice into the pan, and add cumin, paprika, cayenne pepper, salt and pepper. Bring the sauce to a simmer, and let it cook for about 5 minutes. If the sauce seems a bit dry, add water as needed.

Using a large spoon to make 4 wells in the sauce apart from each other, and then crack the eggs into each well.

Cover the pan and cook until the egg is as well done as you’d like. If you like it on the easy side, you can go ahead and just turn off the heat, and let it cook covered.

Sprinkle with chopped cilantro, and serve!
