Strawberry Boba

Only 3 ingredients! Make fresh strawberry boba at home. It pairs perfectly with strawberry milk or any fruity dessert.

Ingredients

  • 70 g strawberries (1/2 cup)
  • 1 tsp sugar
  • 70 g tapioca starch (1/2 cup)

    Put strawberries and sugar into the cup of a blender and blend until you have a smooth puree.

    Put strawberry puree in a small saucepan over medium to high heat.

    While you are heating up the strawberry mixture, put tapioca starch in a small mixing bowl. When the strawberries are boiling, pour directly into the tapioca starch. Mix with a silicone spatula until a dough forms. If your dough is too try and crumbly you can add a small amount of water or if it’s too wet, add more tapioca starch.

    Turn out the boba dough onto a surface lightly dusted with more tapioca starch. Flatten to about half a cm thick and cut into small squares about 1cm by 1cm (I cut mine into about 9 by 10 rows).

    Set a small pot of water to boil while you roll out your boba. Take each square and roll into a small ball. Repeat until all your dough is used up. I recommend covering your dough with a damp paper towel while you work so it doesn’t dry out.

    When the pot of water is boiling, pour your boba into the pot and cook for 7 minutes. Then take off the heat and cover with a lid. Let rest for another 15 minutes.

    Drain boba, rinse well, and place in a bowl of cool water until ready to use. I recommend eating them within a few hours.
