Ingredients

Quantities are shown as originally provided.

  • 8 ounces of boneless (skinless chicken thighs, thinly sliced along the grain)
  • 8 ounces of chow mein noodles
  • 2 tablespoons vegetable oil
  • 1 small carrot (thinly sliced)
  • 2 green onions
  • 2 cloves garlic (minced)
  • other crunchy veggies
  • 2 cups bean sprouts
  • 2 tablespoons soy sauce
  • 1 tablespoons oyster sauce
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. 1

Cook the chow mein noodles according to the package instructions, then drain and set aside.

  2. 2

In a small bowl, mix together the soy sauce, oyster sauce, sugar, salt, and pepper. Set this sauce aside.

  3. 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the sliced chicken and stir-fry until it's cooked through and no longer pink. Remove the chicken from the skillet and set it aside.

  4. 4

In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion, bell pepper, garlic, and mushrooms. Stir-fry for a few minutes until the vegetables are tender.

  5. 5

Add the cooked chicken back to the skillet along with the bean sprouts and the cooked noodles.

  6. 6

Pour the sauce mixture over the ingredients in the skillet and stir-fry everything together for a couple of minutes until it's well combined and heated through.

  7. 7

Taste and adjust the seasoning with more salt, pepper, or soy sauce if needed.

  8. 8

Garnish with sliced green onions if desired.

  9. 9

Your chicken chow mein is ready to serve. Enjoy your meal!
