- 1 tablespoon olive oil
- ½ large onion, (minced)
- 1 plum tomato, (minced)
- 1 jalapeño pepper (minced (optional; seeds and veins removed if you don’t want it spicy))
- 1 teaspoon minced garlic ((about 2 cloves))
- ½ teaspoon ground cumin
- ¼ teaspoon dried oregano
- ¼ teaspoon smoked paprika
- 1 (15-ounce) can black beans ((no salt preferred))
- 1 tablespoon lime juice ((about ½ lime))
- salt, (to taste)
- chopped cilantro (for serving (optional))
Instructions
- 1
Heat oil in a medium saucepan over medium-high heat.

Add onions, tomatoes, jalapeño (if using), garlic, cumin, oregano and smoked paprika. Stir and saute for 5 minutes, until onions have softened and become translucent.
