Plantain Waffles - Sierra Leone Flavours

Ingredients
Quantities are shown as originally provided.
- 1/2 tsp baking powder
- 1/2 tsp ground nutmeg ((or to taste))
- 2 eggs beaten
- 1 large ripe plantain (, peeled and mashed)
- 2 tbsp maple syrup

Switch on waffle maker and dial up to the brown setting you desire.

Preheat waffle maker.

Mix the flour, baking powder and nutmeg in a large bowl and make a hole in the centre.

In a different bowl, whisk together milk, eggs and butter before adding in the mashed plantain and maple syrup and combining thoroughly.

Slowly whisk the milk mixture into the flour to make a batter and don't worry if there are a few lumps.

Pour half a waffle measure cup of batter into each waffle well, close lid and cook until timer has finished and beeps three times.

Repeat until all the waffle mixture is finished.
