Ingredients

Quantities are shown as originally provided.

  • 1.5 cups neutral oil (vegetable oil, canola, soy bean, or grapeseed are great options) 1
  • 6-8 tbsp chili flakes (Sichuan chili flakes are best, but you can also use dried Chinese chilies or Korean gochugaru) 2
  • 1 tbsp soy sauce
  • 1/2 tbsp sesame seeds
  • 1/2 tsp salt, to taste

Instructions

  1. 1

In a heat-proof bowl, combine together the chili flakes, soy sauce, sesame seeds, and salt.

  2. 2

Heat your neutral oil to around 250-300 F, or when a wooden chopstick/spoon sizzles when submerged in the oil.

  3. 3

Pour the hot oil over the chili flakes and immediately stir to evenly distribute the oil and to avoid burning the chilies 3.

  4. 4

Taste the oil and season with more salt and/or soy sauce to taste. Store in an airtight container and let cool completely prior to refrigerating and serving 4.
