  • Cooked pulled pork
  • Romaine lettuce, (finely cut)
  • Your favorite salsa
  • Grated cheddar or Monterey Jack cheese
  • 1 cup uncooked basmati rice
  • 1 tbs light olive oil
  • 1/2 tsp salt
  • 1 dry bay leaf
  • Juice from one lime
  • 1 tbs chopped cilantro ((optional))
  • 1 tbs light olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 14 oz. can organic pinto beans, (drained and rinsed well)
  • 1 ripe avocado, (mashed)
  • 1/2 lime, (juiced)
  • Salt and pepper to taste

Instructions

    Cook basmati rice according to package directions, adding in the oil, salt, and bay leaf at the beginning of the cooking process.

    Once rice is cooked, remove the bay leaf. Squeeze in the lime juice and add the chopped cilantro if using. Fluff with a spoon or fork.

    In a small saucepan over medium-low heat, add the olive oil and spices. Heat for a minute, then add the beans. Cook for approximately 5 minutes, stirring occasionally. Set aside.

    In a small bowl, combine the avocado, lime juice, and salt and pepper.

    Start with a bed of lettuce or rice and layer on the toppings!
