Ingredients
Quantities are shown as originally provided.
- 2 lb yellow peaches
- ½ yellow onion
- 3 serrano peppers ((see notes))
- 1 inch piece ginger
- 3 garlic cloves
- 15 cardamom pods ((see notes))
- ¼ tsp salt
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp ground cinnamon
- 1 cup brown sugar ()
- ¼ cup white distilled vinegar ((see notes))
- ½ cup water
- 1 lime
- 1 tsp white cumin seeds
- 1 tsp black mustard seeds

Wash the peaches, roughly chop them into 1/2 inch pieces, discarding the pits.

Dice the onion and the serrano peppers.

Peel and grate the ginger.

Grind the cardamom into a powder using a small spice grinder.

Mix the peaches, onions, garlic cloves, grated ginger and all the spice powders together.

Add in the vinegar, lime juice, and half cup of water and cook on high until the liquid starts to bubble.

Cover, reduce the heat to low, and simmer for 15 minutes.

Dry roast the cumin seeds and mustard seeds and add them to the chutney at this point.

Cook uncovered on medium-high heat un til the excess liquid evaporates and the chutney thickens (about 5 minutes).
