- 1 Onion (finely chopped)
- 2 cloves Garlic (minced)
- 1- inch Ginger (grated)
- 1 tsp Salt (to taste)
- 1 tsp Cumin Powder
- 1 tsp Coriander Powder
- 1/2 tsp Turmeric Powder
- 1/4 tsp Chilli Powder (adjust to taste)
- 400 g Carrots (peeled and sliced into rounds)
- 200 g Peas (fresh or frozen)
- 400 g Tomatoes (canned)
- Coriander (to garnish)

Heat the vegetable oil in a large pan over medium heat.

Add the chopped onion and cook until softened and translucent.
