- 15 ml dry sherry or cooking wine
- 15 ml tomato sauce
- 15 ml soy sauce
- 15 ml vegetable oil
- 1 teaspoon caster sugar
- 1/2 clove garlic minced
- 1 tablespoon ginger root chopped
- 1/2 teaspoon green chilies finely chopped, optional
- 1 spring onion optional

Ensure that the ginger is fresh and peeled before finely chopping it. Similarly, finely chop the onion. The amount of onion can be adjusted to your taste; some people prefer no onion at all and opt for just the spring onion garnish to add a mild onion flavor to the dish.

Finely chop the chilies and mix them with the sweet vinegar. Then, combine all the ingredients, except for the spring onion, in a bowl. Mix well. Chop the spring onion and sprinkle it over the dipping sauce before serving
