Steamed Egg Tofu with Dried Shrimp Sprinkle

Ingredients
Quantities are shown as originally provided.
- 3 tube (125 gram each/375 gram total) egg tofu
- 75 gram dried shrimps
- 3 tablespoon soy sauce
- 3 tablespoon oil
- 5 clove garlic, minced
- 1 red chili, thinly sliced
- 1 scallion, thinly sliced
- 1/2 teaspoon sugar
- 1/2 teaspoon white pepper

Steam tofu: Cut egg tofu into 1-inch pieces, arrange them on a heat-proof plate, and steam over medium-high heat for 5 minutes. Set aside.

Add sauce: Stir soy sauce with five tablespoons of hot water and pour this over steamed egg tofu.

Prep dried shrimp: Soak dried shrimps in hot water for 5 minutes. Strain the shrimp and ground into small pieces with a chopper/food processor.

Cook sprinkle: Heat 3 tablespoons of oil over medium-high heat. Sauté garlic for 30 seconds. Add shrimp, sugar, and pepper, and cook for 2 minutes. Add scallions and red chilies and cook for another 30 seconds.

Sprinkle egg tofu: Top steamed egg tofu with cooked dried shrimp sprinkle. Serve immediately with steamed white rice.
