Ingredients
Quantities are shown as originally provided.
- 1 pound lean ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 small head cabbage, chopped
- 4 cups beef broth
- 1 (14.5 oz) can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- 1
In a large pot or Dutch oven, cook the ground beef over medium heat until it's no longer pink, breaking it apart with a spoon as it cooks
- 2
Once the beef is cooked, add the diced onion and minced garlic to the pot. Simmer the onion for a further two to three minutes, or until it is fragrant and transparent
- 3
Stir in the chopped cabbage and cook for another 5 minutes, allowing it to soften slightly
- 4
Add the beef broth and diced tomatoes (with their juices) to the pot. Stir well to combine
- 5
Season the soup with dried thyme, dried oregano, salt, and pepper, adjusting the seasoning to taste. After bringing the soup to a simmer, lower the heat. Cover and let it simmer for about 45 minutes to allow the flavors to meld together.
