Strawberry Lemonade Popsicles

This Strawberry lemonade popsicles recipe is a delightful frozen treat perfect for staying cool during the hot summer months. These homemade popsicles are one of my favorite healthy desserts and the additional bonus is that they can be made with a handful of ingredients.

Ingredients

Quantities are shown as originally provided.

  • 1-1/2 cups of fresh strawberries.
  • 3/4 cup freshly squeezed lemon juice (about 4-5 lemons)
  • 3/4 cup water
  • 3-4 tablespoons monk fruit sugar (adjust according to your taste)
  • 1 teaspoon orange blossom water (optional)

Instructions

  1. 1

In a blender or food processor, combine the hulled strawberries, lemon juice, water, and sugar. Blend until you get a smooth mixture. Taste and adjust the sweetness by adding more sugar if needed.

  2. 2

Pour the strawberry lemonade mixture into the popsicle molds, leaving a little space at the top of the mold to allow for expansion as the popsicles freeze.

  3. 3

Insert the popsicle sticks into the molds. If your popsicle molds come with a lid that holds the sticks in place, use it to secure the sticks in an upright position.

  4. 4

Place the popsicle molds in the freezer and let them freeze completely, usually taking about 4-6 hours or overnight.
