Resurrection Rolls
Resurrection rolls are a simple and delicious Easter morning breakfast tradition. Teach your children the story of Jesus Christ's resurrection and enjoy an Easter morning breakfast together.

Ingredients
- 1+1/3 cup milk (warmed to about 90ºF)
- 4 tbsp unsalted butter (melted)
- 1/4 cup granulated sugar
- 2 tbsp instant yeast
- 2 tsp salt
- 2 tbsp cornstarch
- 2+3/4-3 1/4 cup bread flour (see recipe note)
- 12 marshmallows
- 2 tbsp melted butter
- 1 tbsp granulated sugar
- 1 tsp ground cinnamon

To the bowl of a stand mixer, add the warm milk, melted butter, sugar, yeast and salt. Watch for the yeast to activate and smell yeasty. This should happen right away with instant yeast. Then add the cornstarch and 2 3/4 cup of flour to the center of the bowl. Knead using the dough hook for about 5-8 minutes until the dough is soft and cohesive. Add the extra 1/2 cup flour during this time only if needed. The dough should feel tacky, not overly sticky. Alternatively you can mix the ingredients together in a bowl and knead the dough on your countertop by hand for about 10 minutes.

Line a baking sheet or 9 by 13-inch pan with parchment paper. Turn the dough out and cut into 12 equal pieces.

Mix together the cinnamon and sugar in a small bowl. Melt the butter in another small bowl. Take a piece of dough and stretch it into a small circle with your fingers. Dip a marshmallow into the butter and then into the cinnamon/sugar mixture, explaining the symbolism as you work. Place the marshmallow into the center of the dough and pinch the dough around the marshmallow, forming a ball.

Place the dough ball onto the baking sheet and repeat with the remaining pieces of dough. Cover the dough balls and let rise in a warm place for about 30 minutes (an oven with the light on can help speed up the rise). If the rolls have not risen in 30 minutes, move them to a warmer place and give them another 15-20 minutes to rise.

Preheat the oven to 350ºF. Bake the risen rolls until lightly golden on top for about 22-25 minutes. Top with melted butter if desired.

Remove rolls to a serving plate and enjoy opening the rolls and finding the “empty” tomb on Easter morning. These rolls are best eaten warm. Enjoy!
